I have learned that the olive oil is the best since it contains good fat, and it can even helps with the cholesterol level.
1. Is it true?
2. Can we use Olive oil for deep fry then?
3. What about the the yellow flower(I don't know the english name for it) oil that is sold a lot in Finland? Is it comparable to the olive oil?

Answer

The effects of olive oilon human wellbeing are wellknown and you can study them at:

Deep frying with olive oil is not as food as Safflower Oil, which has a smoking point at 510 degrees F. Olive oil has its smoking point at only 320 degrees F.
The smoke point refers to the temperature at which an oil begins to smoke, become discolored, and decompose. Cooking oil should never be allowed to heat to the smoking point because this will cause food to burn and will produce an unpleasant taste.
So the higher the smoking point the better it is for deep frying.
The yellow plant grown in Finland is called Colza or rapeseed or Turnipe Rape, by its latin name: Brassica rapa oleifera. The rapeseed oil is considered good, but controversial, and less tasty than olive oil.
